And i would like to ask if I should use a silver baking tin instead of a black one? cause i heard from others that the black tin may affect the temperature, therefore may overcooked the cake. So I omitted it. There was no lemon juice available and so I substituted with lime juice. Also, I added grated zest into the mixture. When the cake was cooled, I made butter icing for the topping and grated more lime zest to for color. I had really good feedback from friends and am really glad I gave this recipe a go. I used a cheesecake pan with removable bottom base (not a springform pan) but if you bake in a springform then, just unclasp it after your cake is cooled down to room temperature. Unlike American cheesecake, Japanese cheesecake need not be chilled though it can be just as nice. Chilled cakes are easier to release.
