Today, I challenged myself to do a second take on making macaroons again. This time I told myself to tread carefully... I also told my daughters that it is going to be a day whereby I would place the "No Disturb" sign on my kitchen door so I would like them both to be as good as Gold the whole afternoon. Tuesday is the perfect day for me to try recipes undisturbed because neither of them have any classes nor tuition/enrichment. That means no need to bake halfway and send or pick them up.
So this time before I started with the whites, I made sure all my ingredients are in perfect measurements, everything is laid out and within reached and I read every line of the recipe as per instructed. This time I did not blunder with the egg whites and I made sure all my piping bags are also readily opened with nozzles in the cup. I can start without interruptions.
Again, I used the same recipe. French Macaroons using the Italian Meringue method. I was alert and careful with every step. I piped out small macaroons and baked them. No mess, no swearing.. it went smooth and surprisingly, none of my girls 'told on the other', no tantrums nor fights to handle and the girls didn't come raid the fridge... So how did it went?
I can't believe something that can make me so happy. Feet. Not 'smelly feet' feet. Macaroons' feet. Yes, THE FOOT FEET. No mean feat, okay? Having feet is akin to striking lotteries when it comes to making macaroons. I was so delighted I would have wanted to skip around the living and shout I have feet! I have feet! My macaroons have feet... Glorious Feet... did you know that without Feet is like something missing or incomplete when it comes to making French macaroons?
Yesterday, I was half satisfied because even though the macaroons yielded the right texture, sweetness and chewiness, it had no feet. I shrugged, no bother, but secretly in my heart, I wanted those feet!! *tantrums...*
Today, some of my macaroons cracked. Is my oven too hot? Never mind. Happy Feet is Bliss. Cracked Macaroons can be trouble shot later.
Some disappointments, some compromise. No confident for me to sandwich them yet. I want to make sure each of my macaroons are all fine before I get started with making butter creams or ganache for the sandwich creams in between.
