Ultimate Muffiins (Peanut Butter, Nutella, Choc Chips)




Aaaahhhh... Imagine being in a fairyland filled with whiffs of Peanut Butter, Nutella and Chocolate when the muffins were baked in the hot oven... ULTIMATE BLISS


I am just addicted to baking. I went out to buy more cheeses (for cheesecake) and bought extra whipping cream, butter and flour. Actually I was a little under the weather but that didn't stop me from baking in the mornings. I had my helper helping me out instead. I read the recipes and measurements to her and stood by the kitchen door and told her the steps.

My girls wanted more Chocolate Chips in her muffins and my youngest one simply adores Peanut Butter...

I bought a 510gm bottle of Peanut Butter this morning and also a bottle of Nutella for the muffins. For Peanut Butter, I ALWAYS swear by Planters under the umbrella of Kraft. I do like Skippy sometimes but I ALWAYS cannot resist Planters. It was between Planters or Skippy and it was not really too difficult.

Armed with my kids' favourite, I decided to make the ultimate Muffins with Peanut Butter, Nutella and Chocolate Chips.



THE ULTIMATE MUFFINS
PEANUT BUTTER, NUTELLA
& CHOCOLATE CHIP MUFFINS




Ingredients
250g Plain Flour
2 tsp Baking Powder
A generous pinch of salt
120g Castor Sugar
200g Peanut Butter

2 Eggs (beaten lightly)
80 Milk
90g Melted Butter
2 tsp Vanilla
100gm Chocolate Chips

Nutella
Chocolate Chips

In a large mixing bowl, mix the flour, baking powder, salt, sugar together. Add Peanut Butter and rub or mix till it becomes like coarse breadcrumbs.

Mix the wet ingredients in another small bowl. Pour this into the coarse flour mixture. Fold them till the dry mixture becomes moist. Do not over stir this mixture. Add the chocolate chips and mix it briefly.

Scoop the batter into muffin cups. Add a small teaspoon of Nutella chocolate into each cup at the top. Using the toothpick, swirl the Nutella two rounds and top with more Chocolate Chips if desired.

Bake it in preheated oven of 180 deg C, for about 20 minutes or till the toothpick comes out with no wet batter. If you see it turning light brown, can check it. If your oven is too hot and it browns fast but the batter is not quite cook, use aluminium foil to cover the top and let it bake further to avoid burning the top.
