Strawberry Sandwich Sponge


Since the Chinese New Year started, I've stopped baking cakes and cookies for a while. That was because my family and I took a short trip to Awana for Chinese New Year. When we got back, there was still so much goodies left untouched. And when the momentum in cooking and baking is not continued, I am beginning to feel lazy.

Spent the rest of the week facebooking and doing some research on Garbage Enzyme. I'll do a post about my plastic container of that soon.

I bought some Korean strawberries on Sunday. I figured that if we don't eat them, it will be rotting in the fridge. My girl's Fruity Friday (when she needs to bring fruits to share) is two days away. I don't think the strawberries can last till then. I decided to use it as a filling for a sponge cake. I decided to make a real speedy sponge cake by using a premix. This premix is one that is very useful if you want to make a quick sponge.

Premix Flour
Like all premixes, all you need are eggs and water. If you would like to make a quick sponge cake, try this one that I bought. It's by Bake King.

Bake King is one of the brands that I use for many baking ingredients. I use their cake flour, bread flour and also top flour. And I bought their premix for sponge cake recently because Bake King's products were all sold at a special price, due to overstocking of Chinese New Year supplies probably. I wasted no time in buying all the different flours since I like baking a lot.

In premixes, there is no hassle with weighing ingredients like sugar, flour, baking powder, etc except add eggs and water into it. I tried their fancy method, which is to add butter as well. I also replaced half the water with milk.

A pack of Bake King's Sponge Mix weighs 1kg. The instruction is to add 1000gm of egg, 200gm butter and 140gm water. But I think that will be too much for my family.

Pro-rate for a smaller amount
I decided to try a smaller portion following the ratio given. So I weighed 200gms of the Sponge Mix, add 3 eggs (200gm), 20gm Butter and 28mls of water/milk combo. Mix it all up in a mixer. I would have wanted to beat the butter, eggs and water/milk first but if the sugar is in the flour, I can't fold it so I made sure I follow the instructions by beating them up for about 8 to 12 mins. I used medium speed. Look at the beautiful golden brown after baking for about 20 minutes.


The Strawberry Sandwich Sponge tasted really yummy. But I wished I had more Strawberries. The result for the sponge was really good. The texture was soft, moist, not heavy at all. I'm amazed how good this premix is. I didn't add any sugar when whipping the cream as I didn't want it too sweet. The tart Strawberries, creamy whipped cream and sponge were a wonderful balance.

This cake is simple for those without any baking experience! It's so simple and if you divide them into 5 cakes at 200g of premix used each time, one cake won't cost you more than $12, inclusive of eggs, butter, cream at all.
