Mandarin Orange Muffins





I bought 10 'bijis' of Fuji Apples, 3 large Dragonfruits, 2 types of Grapes and some Strawberries yesterday. Horror when I have no space for them. I needed to clear the mandarin oranges in the fridge (yes, i still have a lot of them in my chiller). I was so delighted when I read from a borrowed book - Muffins Galore that in it has recipes that calls for the use of Clementines or Mandarin Oranges under Fruit Muffins section.

Great! I browzed through it and thought, hmm... the recipe actually needs spices like Nutmeg and All Spice to be added and I don't have that at home. So I decided to browze further and altered a Vanilla based muffins, increased some flour and make one using Mandarin Oranges, but without the spices.

I mixed them up and cross my fingers, made a magic wish and it worked! Of course, I was just ecstatic!

Instead of using the same-same type of muffin cups I used the other day, I decided to be more adventurous by using all my bento silicon cups that can be used in the oven as muffin cups! There were some extra large ones which I omitted. I even added some Chocolate Chips on it as my girls love them.



My Mix-Matched Mandarin Orange Muffins!




Here is the adjusted recipe for

FAD Mom's Mandarin Oranges Muffins


250g Plain Flour
2 tsp Baking Powder
A pinch of Salt
100g Caster Sugar
2 Eggs, beaten lightly
80mls of Fresh UHT Milk
90g Melted Butter
2 tsp of Vanilla Essence

1 1/2 Mandarin Oranges/Clementines/Oranges, cut into segments (remove pips)
Chocolate Chips (optional)


Method
In a large mixing bowl, mix Plain Flour, Baking Powder, Salt and Sugar till even.
In a bowl, add the lightly beaten Egg, Milk, Butter and Vanilla

Add the egg mixture into the flour mixture. Using a flat spatula, fold the flour till they are just absorbed, taking care you do not handle too much or over stir. Next, add the cut up Mandarin Oranges. Scoop them into your muffin tray that are well greased or individual Muffin Cups.

Bake at preheated oven of 180 deg C for about 20 minutes or till the muffins are light golden brown in colour. To check if they are baked, stick a tooth pick and if it comes out clean with no batter, you're all right there!

Clementine Muffins
300g Plain Flour
2 tsp Baking Powder
1/2 tsp Salt
1/4 tsp Ground All Spice
1/4 tsp Freshly Grated Nutmeg
125g Caster Sugar
60g Margarine or Butter
1 Egg, lightly beaten
200ml Milk
3 Clementines or Mandarin Oranges
(peeled, broken into segments and chopped)
