Deep Fried Wantons

Whenever I prepare Penang Lor Bak, I always have access marinated meat. I'd chopped these access meat a little and add some prawns and make Wantons instead. These marinated meats are yummy as Deep Fried Wantons.

On any normal day, I always keep a pack of frozen Wantan skins in the freezer. And some days when I'm in the market, I would get the fresh ones and some minced meat specially for Wanton preparations. My girls love to eat deep fried Wantons.

Here is the recipe that I use for Deep Fried Wantons. My girls also love to come into the kitchen to do the things Mummy does so sometimes I let them 'play' a little before I shoo them out.


The recipe is very similar to the Lor Bak marination except that Wantons are made with minced pork, chicken and prawns. Alternatively you can also use this minced mixture to wrapped over Bean Skin for a Singaporean Style Lor Bak (minced meat), but leave out the prawns and add more pork or chicken instead.

Ingredients
250g lean minced pork
250g minced chicken
100g prawns diced very small

3cm of a carrot, chopped or diced fine
2nos water chestnuts chopped or diced fine
3-4 nos shallots chopped fine
Spring Onion chopped

Marinade
1 tsp 5-spice powder
2.5 tbsp oyster sauce
1.5 tsp sesame oil
3 tbsp sugar
5 tsp tapioca flour
1/2 tsp pepper powder
1/2 tsp salt
1/2 tsp light soya sauce
1 tbsp Ginger juice
1 tsp chicken stock granules


Wanton skins for wrapping
Spring Onions for tying the wrapped bundles
Cornstarch mix with a little water


Method:
Mix the meat and prawns with the chopped vegetable and marinade them for about one hour.

To wrap them, place a small scooped of the meat mixture in the centre of a wanton skin. Brush a little cornstarch solution in the perimeter around the meats and gather them up like a bundle. The cornstarch solution will help to hold up and stick the skin together like a wrapped bag.

In a small saucepan of simmering water, add a drop of cooking oil. Turn off the fire, and place long strips of spring onions into it. It will soften the spring onions and you can use these as little green strings to tie your wantons.

I like to eat fried wantan lahh! Do not know there need to add in minced chicken.
