Sometime last year, I made a cookie recipe that was so soft, it not just melt in your mouth, but crumbles in your hands too. I decided to take the recipe and tweak it a bit and look at the ingredients closely how to prevent it from crumbling and yet get the same melty feeling.
The original recipe I had was to be piped out because the butter contents is really a lot. I didn't want piped cookies because my girls pestered to have 'Bear' shaped ones. I took the same recipe, halve the butter and added half a yolk so that hopefully it would bind it. I also added vanilla, some milk and increase the sugar.
I share with you this recipe and in the next days and week, I might just go double recipe since Chinese New Year is coming. This recipe yields about 60 - 80pcs of cookies depending on size of cookie cutter size.
This dough, generally do not need much kneading but you can knead it shortly before rolling out. The girls helped me out with the cookie cutter and they had fun of course. It's great fun for kids to make cookies and I like this one because the dough is not messy and easy to handle. And the best part? It tastes yummy and melts in your mouth, not your hands, finally.
Here is the recipe:
150g butter
6 tbs icing sugar, round heap (or more if you desire sweetness)
125g cornflour
125 plain flour
10ml milk (or more if you think it's too dry)
1tsp vanilla
half yolk ( save half for egg wash later )
Method
Cream the butter and icing sugar till it is light and fluffy and double in bulk. It should be a pale colour. Add the yolk, vanilla and milk and mix in low speed.
Fold in the cornflour and plain flour that has been sifted together. Mix them till they form a dough paste. On a marble base, roll the dough and cut out with your fancy cookie cutter. Brush the top of the cookie with the remaining egg yolk.
Bake in a pre-heated oven of 170 deg C at about 15 - 20 minutes till it is golden brown. If you did not brush with egg wash, it will NOT have a golden brown top so estimate the time about 15 - 20 minutes and take the cookies out.
