Cereal Cookies


I made this Cereal Cookie last year when I found that I had Nestum cereals in excess. It was about a month to expiring and my family are not fans of Nestum. I bought them each time when someone is sick and needed variety for soft diet meals and each time I am stuck with a tin of it. Then mom gave me an extra tin because she has too many at home.

I found a recipe that was meant to be Oatmeal cookies but decided to replace the oats with nestum cereals. The result was wonderful and the kids loved it. The cookies were the type that really melts in your mouth. I even added chocolate chips to entice the kids to eat them and it was successful!

Ingredients
180gms Margarine, melted double boiler and leave to cool
2 cups of Nestum Cereal
1 1/4 cups Self Raising Flour
1/2 cup of caster sugar
1 cup dark chocolate chips
1 egg, beaten lightly

In a large bowl, mix the ingredients together in this sequence - butter, sugar, egg. Stir till the ingredients are mixed well. Fold in the flour and the cereal and chocolate chips last. Mix them until well coated. Using a spoon, scoop a dollop of the mixture and place them on a greased and lined tray, not too close as it will still raise slightly in size when baked).

Bake at 180 degree C about 15-20 mins or until golden brown.

When cooled, keep them in air tight containers.
