Have you ever tried Gnocchi before. They are really yummy. I am a fan of Spinach and I source for everything Spinach and Cheese once. Then I found this Gnocchi and tried it. Here is the recipe.
1 tbsp coarse sea salt
750g frozen spinach, thawed
200g ricotta cheese, drained
1 large egg
1 egg yolk
125g Parmesan cheese
pinch of nutmeg
salt and pepper to taste
125g salted butter
10pcs sage leaves, torn
Boil a large pot of water and add the coarse salt. Blanch the spinach until they are tender, about 5-7 minutes. Drain. Don't throw about the water in the pot. Cool the spinach and chop it fine.
Boil the water that was in the pot.
In a large bowl, place the chopped spinach, ricotta, egg, yolk, parmesan, nutmeg, salt and pepper. Mix them well and mould them into the size of golf ball.
Cook this gnocchi balls in the boiling water. It should take about 2-3 minutes. They usually bob up when they are cooked. Scoop them and place in a serving dish.
Place butter, sage in a pan and like double boiler method, let them melt. Drizzle this butter sage mixture on teh gnocchi. Sprinkle with extra parmesan if desired.
